The Replicator clones Dick’s Brewing Co. Danger Ale.

Goose Island Honkers Ale clone

Honkers is a medium-bodied Pale Ale with a perfect, off-white head. The aroma is a blend of spicy hops and fruit. The flavor is fresh and clean, with a rounded malt body and a dash of hops. The finish is reminiscent of the flavor. This beer is easy-drinking, thirst- quenching and full of character.

Issue: April 2001

Redhook ESB clone

This Extra Special Bitter is a deep copper-orange color, with an off-white, creamy head. The aroma is a judicious blend of fruity hops and toasted malt. Medium in body, it is full and round, with a nice blend of malt balanced with gentle hop character. Redhook ESB ends with a sweet malt finish.

Issue: April 2001

Brooklyn Pennant Pale Ale '55 clone

Pennant is a well-crafted pale ale brewed as a tribute to Brooklyn’s world champion baseball team of 1955. (That would be the Dodgers, who actually beat the Yanks in that crosstown series.)

Pennant pours with a dense light-beige head that sits on a chestnut-colored beer. The aroma is complex and malty, with a hint of freshly baked bread. The full malt flavor is balanced with a clean hop background. English hops provide a moderate bitterness that complements the smooth mouthfeel. The aftertaste is dry with a hint of hops.

Issue: April 2001

Orthognathous Kölsch

Kölsch is a beer speciality brewed in Cologne, Germany. It is a clear beer with a bright straw-yellow hue.  It is less bitter than the standard German pale lager and is warm fermented then cold-conditioned.

Issue: April 2001

Hop Til You Drop California Common Beer

Though not super hoppy, California Common is a style that shows off the aromatic power of homegrown hops very nicely.

Smithwick's Ale clone

When my wife and I visited Ireland, we really enjoyed our share of Smithwick’s Ale. Smithwick’s is a light-bodied, copper-colored Irish Red ale with a pleasant hint of roastiness and a dry finish. Here’s a  successful homebrew version of Smithwick’s.

Copper Ale

Copper ales generally tend to lean toward balancing Maltiness with Hoppiness.

Midnight Sun Brewing Full Curl Scotch Ale clone

Full Curl is a wee heavy strong scotch ale at about 7% alcohol by volume.

Issue: Mar/Apr 2007

Peanutbutter and Chocolate Sweet Stout

I used peanut butter extract and cordial oil, but you could also use 6 oz. of low fat peanut butter and add it at intervals during the boil just like the cocoa powder is added.

Hobgoblin Turkey

This is one of the most delicious recipes you will ever make. We use a Cajun injector, available at Metal Fusion (800-783-3885) for $6.45. They also are sold at Walmart and K-Mart stores. This is optional, but it’s a great way to have a butter (and beer) basted turkey. If available, purchase a natural, free-range bird. Don’t count on many leftovers from this turkey!

Sweet Potato Hobgoblin Biscuits

When our children were little, this was the only way we could convince them to eat sweet potatoes. If you want to maintain the tradition of sweet potatoes on the holiday table, try these delicious biscuits (just don’t tell the kids what’s in them). These are quick and easy to make. Just boil and mash the potatoes the day before. Makes 12 biscuits. This recipe can easily be doubled.
