Mauldon’s Black Adder clone
A dark bitter stout. Roast and nut aromas with a fruity balance of hops and dark malt provide an excellent lingering finish.
Get Wit The Program
When crafting a witbier, avoid overdoing any one aspect of it. Don’t go crazy with the spices. Keep the hopping level restrained. Don’t let fermentation temperatures rise too high. Don’t sour the beer excessively. Your beer should be flavorful, but all the flavors should be balanced.
Dark Winter Saison
Saisons are traditionally a warm weather drink, but a few of us have a tradition of getting together each fall to brew a strong, dark, spiced saison. Each year’s version has a different dried fruit and dark malt. The blend of spices along with the earthiness of the Brettanomyces and buckwheat honey make for an almost savory beer. Brett C is a good complement to the Dupont strain because it helps to dry out the beer.
McKenzie’s Brew House’s Saison Vautour clone
his is the recipe for McKenzie’s Brew House’s multi-gold-medal-winning rye saison from head brewer Ryan Michaels. It’s a good example of how a very simple recipe can result in a beer of extraordinary complexity. The clean version has a wonderful rustic character from the rye and yeast, while the barrel-aged version adds some tartness and funk.

Dirty Hands Brewing Co.’s Liberty Ship Stout clone
This beer has a nice bittersweet chocolate and coffee profile, with just enough hop presence to offset any cloying sweetness. Unfortunately Dirty Hands Brewing closed their doors in 2016, but their legacy can live on.

Sumpin’ Like Little Sumpin’ Sumpin’ (Wheat IPA)
If you enjoy the Lagunitas Brewing Co.’s A Little Sumpin Sumpin, then you should enjoy this homebrewed version. Smooth malt background with the help of wheat and Victory® malt and a huge hop profile.
Smooth Rye’d
As the name implies, this is a smooth version of a rye IPA. It has the characteristic “snap” from rye and rye malt, but this is not as pronounced as in some rye beers. If you’d prefer a more “in your face” version, try adding a pound (0.45 kg) of rye malt to your mash.

Leaf Peeper Imperial Red
A fall time classic in my house. A big citrus blast of hops with a nice malt backdrop.

Amarillo® hops can be a tough one to find in the market these days. If you do happen upon some, this is a great red IPA for using them.
