Unibroue’s Blanche De Chambly clone
There are many Belgian witbiers. Most are shimmery and pale with a sprightly, refreshing orangey-spicy aroma. One of the best that I have ever tried comes from a medium-size brewery near Montreal, Unibroue, makers of La Fin du Monde (The End of the World) and Maudite (Damned), Belgian-style strong ales that have earned numerous international gold and platinum medals. I don’t know if the brewers use the same yeast in all their brews, but I have had great luck reculturing their yeast and brewing with it. They don’t reveal what particular combination of spices they use, beyond the traditional coriander and orange peel, but I like to add ginger.
Rogue Shakespeare Stout clone
Rogue’s Shakespeare Stout is a classic example of the style. Rogue describes it as, “Ebony in color with a rich creamy head, earthy flavor and a mellow, chocolate finish.”
Fuller’s London Porter Clone
According to Fuller’s website, “A modern take on the 19th century porter style, Fuller’s rich, chocolatey London Porter recaptures the brooding beauty of pre-Victorian London. It’s evocative of simpler times but it’s a wonderfully complex pint.”

Madison Brewing Co.’s BURNT clone
Toasted hemp seeds, infused into this American brown ale, provides a unique nutty character. The hops balance the malt characters nicely. Recipe provided by the head brewer at this Bennington, Vermont based brewpub.
Dogfish Head 60 Minute IPA clone
This innovative IPA employs Dogfish Head’s method of adding hops continuously over the entire boil. Showcasing a big US Northwest hop bill, 60-Minute is the session beer sister of 90-Minute IPA.
Sucro-licious Belgian
Sugar selection can completely change the impression of a Belgian beer. Some dubbels are little more than Belgian blondes with dark candi syrup instead of pure sucrose. This recipe from Michael Tonsmeire leaves it up to the brewer to decide which sugar-type to determine the final beer’s character.
